Instead of buying boxed rice mixes, you can make your own and save money.  Here’s a recipe for the rice mix, along with a Chicken Rice Casserole that uses the rice mix. You can also save money by purchasing the herbs in bulk at a natural foods store, or in the natural foods section of your grocery store.  Be creative and add dried vegetables to the rice mix!

Homemade Seasoned Rice Mix

3 cups uncooked long grain rice
2 Tablespoons instant chicken bouillon granules
¼ cup dried parsley flakes
2 teaspoons onion powder
½ teaspoon garlic powder
¼ teaspoon dried thyme

Combine ingredients; store in an air tight jar.

To prepare mix as a side dish:
Bring to a boil 2 cups water and 1 Tablespoon butter.  Stir in 1 cup mix.  Reduce heat; cover and simmer 15-20 minutes or until cooked.  (Brown rice will take twice as long to cook.)  Yield:  6 servings.

Chicken Rice Mix Casserole

2 ½ cups cubed cooked chicken
1 ½ cups frozen mixed vegetables
1 cup Homemade Seasoned Rice Mix
½ cup chopped onion
4 oz. can mushroom pieces, drained
2 cups water
1 can Cream of Chicken soup
¼ teaspoon onion salt
¼ teaspoon dry thyme
½ cup crushed potato chips (optional)

In a greased 2 quart casserole, combine chicken, vegetables, rice mix, onion and mushrooms.  Combine water, soup, and seasonings; mix well.  Pour over the rice mixture; stir to combine.  Cover and bake at 375 degrees for 55-65 minutes or until the rice is tender, stirring occasionally.  Sprinkle with potato chips.  Yield:  6-8 servings.


1 cup farina
1 cup rolled oats
1 cup rolled barley
1 cup rolled wheat
1 cup cracked rye berries
1 cup cracked wheat berries
1 cup corn meal
½ cup sesame seeds
½ cup millet
½ cup flax seeds
½ cup quiona (optional)

Mix all ingredients, store in airtight container.

ten grain bread


Pour 4 cups boiling water over 1 ½ cups ten grain mix (above).  Stir every ten minutes three times.  Cool approximately 45 minutes.

To the warm soaked ten grain mix, add the following ingredients

3 1/2 cups warm water
½ cup honey
½ cup oil
½ cup apple fruit juice concentrate, undiluted and thawed if frozen
2 cups rolled oats
2 Tablespoons salt
2 Tablespoons Vital Wheat Gluten
2 Tablespoons yeast
6 cups freshly ground wheat flour
6-8 cups bread flour, more or less, until dough cleans sides of bowl or is easy to handle

Mix dough and knead well.  Let dough rise twice before putting into bread pans.  Raise in pans and bake at 375 degrees for 25 minutes.  Makes about 8 pounds of bread dough.

This is so handy to have on hand for Holiday gatherings.  It’s a fun recipe to make with a child, package creatively together, and then give as gifts.

Butterscotch Mocha Hot Cocoa Mix

2 cups powdered sugar
3 cups nonfat dry milk
½ cup powdered coffee creamer
½ cup instant coffee
¼ teaspoon salt
1 ½ cups Nestle Nesquik cocoa mix
1 ½ cups butterscotch chips

Combine all ingredients in large bowl.  Pulse 2 to 3 cups at a time in a food processor or blender, until finely ground.  Store in airtight container for up to 3 months.

To make hot cocoa, stir 1/3 cup of mix into 1 cup of hot water or milk.

Here’s a recipe to make dry Ranch Dressing dip mix.  Save money by making your own mix from scratch, save even more by purchasing the spices in bulk at your grocery store.

1 cup dried parsley flakes
½ cup dried minced onion
½ cup garlic salt
½ cup onion salt
¼ cup garlic powder
¼ cup onion powder
2 Tablespoons dill weed
¼ cup Saco buttermilk powder

Mix well and store in airtight container.

To make prepared Ranch Dressing mix well together:

2 cups Miracle Whip or mayonnaise
2 cups milk
