Chop Suey Cookies

chop suey cookies

1 cup butter
½ cup sugar
1 ½ cups brown sugar
2 eggs
1 ½ tsp. vanilla
1 ¾ cup flour
1 tsp. baking soda
½ tsp. salt
2 cups oatmeal
2 cups chow mien noodles
12 oz. pkg. Chocolate chips

Cream sugars, butter and eggs; add vanilla.  Blend in flour, soda, and salt.  Mix in oatmeal, chow mien noodles and chocolate chips last.  Bake at 350* until light to medium brown, about 12 minutes.

I prefer La Choy brand chow mein noodles in this recipe.

    I love these cookies. I think what I like best is that the chow mein noodles balance out the sweetness so they aren’t overly sweet. Makes them even more addicting!
